Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
3 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon black pepper
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
Wooden or metal skewers
Instructions
If using wooden skewers, soak them in water for at least 30 minutes.
In a bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and black pepper. This is your marinade.
Place the cubed chicken into a resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting/sauce. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
Preheat your grill to medium heat (about 375°F) or preheat your oven to 400°F (200°C).
Thread the marinated chicken pieces onto the prepared skewers. Discard the marinade that touched the raw chicken.
For grilling: Place skewers on the oiled grill grates. Cook for 10-12 minutes, turning occasionally, until cooked through (internal temperature reaches 165°F).
For baking: Arrange skewers on a foil-lined baking sheet. Bake for 18-20 minutes, flipping halfway through.
While the skewers cook, prepare the glaze: Pour the reserved marinade into a small saucepan. Bring to a simmer over medium heat. Whisk in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 1-2 minutes.
Brush the thickened honey garlic glaze over the cooked skewers during the last few minutes of cooking, or toss the cooked skewers in the sauce before serving.
Notes
For added color and flavor, thread pieces of bell pepper or onion between the chicken cubes.
If you prefer an air fryer method, cook the skewers at 380°F for 10-12 minutes, flipping halfway. Brush with glaze after cooking.
You can substitute low-sodium soy sauce if desired.
