Prepare a simple weeknight dinner featuring pan-seared chicken coated in a sweet and savory honey garlic sauce, served over rice with a rich, creamy topping.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons apple cider vinegar
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • 4 cups cooked white or brown rice
  • 2 cups steamed broccoli florets
  • 2 green onions, sliced, for garnish

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the same skillet and cook for 30 seconds until fragrant. Do not let it burn.
  4. Pour in the honey, soy sauce, and apple cider vinegar. Bring the mixture to a simmer, stirring constantly.
  5. Pour in the chicken broth and bring the sauce back to a gentle simmer.
  6. Whisk the cornstarch slurry into the simmering sauce. Cook for 1-2 minutes, stirring until the sauce thickens slightly.
  7. Reduce the heat to low. Stir in the heavy cream until the sauce is smooth and creamy. Taste and adjust seasoning if needed.
  8. Return the cooked chicken to the skillet and toss gently to coat it completely in the creamy honey garlic sauce.
  9. To assemble the bowls, divide the cooked rice among four bowls. Top the rice with steamed broccoli. Place the sauced chicken over the vegetables.
  10. Garnish each bowl with sliced green onions before serving.

Notes

  • For a gluten-free option, use tamari instead of soy sauce.
  • If you prefer a thicker sauce, use slightly more cornstarch slurry.
  • You can substitute brown rice or quinoa for white rice.
