Make this easy and hearty Hobo Casserole using ground beef, potatoes, and canned soup for a simple, comforting meal.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (10.5 ounces) cream of celery soup
  • 1 cup water or milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, peeled and thinly sliced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and onion in a skillet over medium heat. Drain off any excess fat.
  3. In a large bowl, mix the cooked ground beef and onion with both cans of soup, water or milk, salt, and pepper. Stir well to combine.
  4. Arrange half of the sliced potatoes in a single layer in the bottom of the prepared baking dish.
  5. Spread half of the ground beef mixture evenly over the potatoes. Sprinkle with half of the frozen mixed vegetables.
  6. Repeat the layers: remaining potatoes, remaining ground beef mixture, and remaining vegetables.
  7. Cover the baking dish tightly with aluminum foil.
  8. Bake for 50 minutes.
  9. Remove the foil. Sprinkle the shredded cheddar cheese over the top.
  10. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  11. Let the casserole rest for 5 minutes before serving.

Notes

  • For a variation, substitute the mixed vegetables with one can of drained green beans.
  • If you prefer a rice-based casserole, replace the potatoes with 1 cup of uncooked white rice mixed into the soup base. Add an extra 1/2 cup of liquid if using rice.
  • You can use cream of chicken soup instead of cream of celery soup if you prefer.
