Follow these steps to grill salmon fillets until they are moist inside with crispy skin, topped with a simple lemon butter sauce.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your grill to medium-high heat (about 400 degrees Fahrenheit). Clean and lightly oil the grates to prevent sticking.
  2. Pat the salmon fillets dry with paper towels. Brush both sides lightly with olive oil and season with salt and pepper.
  3. Place the salmon skin-side down on the hot, oiled grates. Close the grill lid.
  4. Grill for 4 to 6 minutes per side, depending on thickness. For a 1-inch thick fillet, aim for about 5 minutes per side. The salmon is done when it flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit.
  5. While the salmon cooks, prepare the sauce. In a small saucepan over low heat, melt the butter.
  6. Add the minced garlic to the melted butter and cook for 1 minute until fragrant. Do not brown the garlic.
  7. Remove the saucepan from the heat. Stir in the fresh lemon juice and chopped parsley.
  8. Remove the grilled salmon from the grill. Spoon the warm lemon butter sauce generously over each fillet before serving.

Notes

  • For extra flavor, add 1 teaspoon of dried dill or a pinch of red pepper flakes to the sauce.
  • If you prefer a crispier skin, start the salmon skin-side down and cook it almost entirely on that side, only flipping briefly at the end if necessary.
  • If your fillets are very thick (over 1.5 inches), consider finishing them in a 350 degree Fahrenheit oven after grilling for a few minutes to reach the correct internal temperature without burning the outside.
