A recipe for making flavorful focaccia bread with a moist interior, crispy crust, and strong garlic and Parmesan cheese topping.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon instant dry yeast
  • 1 1/2 teaspoons fine sea salt
  • 1 1/2 cups warm water (about 105-115°F)
  • 1/4 cup olive oil, plus more for the pan
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese, divided
  • 1 teaspoon coarse sea salt, for topping

Instructions

  1. In a large bowl, whisk together the flour, yeast, and fine sea salt.
  2. Pour in the warm water and 1/4 cup of olive oil. Mix with a wooden spoon until a shaggy dough forms. Do not knead.
  3. Cover the bowl tightly with plastic wrap and let it rest at room temperature for 2 hours, or until doubled in size.
  4. Gently scrape the dough onto a lightly oiled 9×13 inch baking pan. Turn the dough over to coat both sides with oil.
  5. Cover the pan loosely and let the dough rest for another 30 minutes.
  6. Preheat your oven to 425°F (220°C).
  7. Gently stretch the dough to fill the pan corners. If it resists, let it rest for 10 minutes before continuing.
  8. Use oiled fingertips to press deep dimples all over the dough surface.
  9. In a small bowl, mix the minced garlic, chopped parsley, and 1/4 cup of the grated Parmesan cheese with 2 tablespoons of olive oil.
  10. Drizzle the garlic-oil mixture evenly over the dimpled dough. Sprinkle the remaining 1/4 cup Parmesan cheese and the coarse sea salt over the top.
  11. Bake for 20 to 25 minutes, until the top is golden brown and the edges are crisp.
  12. Remove from the oven and let cool slightly in the pan before slicing and serving.

Notes

  • For a stronger garlic flavor, let the minced garlic steep in the olive oil for 15 minutes before drizzling it over the dough.
  • If you prefer a chewier crust, place a shallow pan of water on the bottom rack of the oven during baking to create steam.
  • This bread pairs well with marinara sauce or balsamic vinegar for dipping.
