Follow this recipe to make tender steak bites coated in garlic butter sauce alongside perfectly crispy pan-fried potatoes.

Ingredients

Scale
  • 1.5 lb sirloin steak, cut into 1-inch cubes
  • 1 lb small Yukon Gold potatoes, quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt, plus more for seasoning
  • 1/4 teaspoon black pepper, plus more for seasoning
  • 2 tablespoons olive oil

Instructions

  1. Season the steak cubes evenly with salt and pepper. Set aside.
  2. For the potatoes, boil the quartered potatoes in salted water for 8 minutes until slightly tender. Drain them well and let them steam dry for 5 minutes. This step helps them crisp up later.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the drained potatoes in a single layer. Cook without moving for 5-7 minutes until the bottoms are golden brown and crispy.
  4. Flip the potatoes and cook for another 5-7 minutes until crisp on all sides. Remove the potatoes from the skillet and set them aside on a plate.
  5. Add the remaining 1 tablespoon of olive oil to the same skillet over medium-high heat. Add the seasoned steak cubes, ensuring not to overcrowd the pan; work in batches if necessary. Sear the steak for 2-3 minutes per side until browned on the outside but still medium-rare inside. Remove the steak from the skillet and set it aside with the potatoes.
  6. Reduce the heat to medium-low. Add the butter to the skillet. Once melted, add the minced garlic and dried thyme. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
  7. Return the steak bites to the skillet. Toss them gently to coat them in the garlic butter sauce. Cook for 30 seconds to warm through.
  8. Stir in the fresh parsley and taste the sauce, adding a pinch more salt or pepper if needed.
  9. Return the crispy potatoes to the skillet and toss everything together briefly to coat the potatoes lightly in the sauce. Serve immediately.

Notes

  • For extra crispy potatoes, lightly shake the pan after the first 5 minutes of cooking to expose new surfaces to the heat.
  • Do not overcook the steak bites; they cook quickly due to their small size.
  • You can substitute rosemary for thyme in the butter sauce for a different flavor profile.
