Ingredients

Scale
  • 4 (6 oz) salmon fillets, skin on or off
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • For the Sauce:
  • 1/4 cup fresh lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh dill, chopped
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the garlic butter: In a small bowl, combine the softened butter, minced garlic, dried Italian herbs, salt, and pepper. Mix until fully incorporated.
  3. Place the salmon fillets on the prepared baking sheet. Spread the garlic butter mixture evenly over the top surface of each fillet.
  4. Drizzle the olive oil over the salmon and the baking sheet around the fish.
  5. Bake for 12 to 15 minutes, depending on the thickness of the fillets, until the salmon flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  6. While the salmon bakes, prepare the sauce: In a small saucepan over low heat, whisk together the lemon juice, melted butter, parsley, dill, and lemon zest until just combined and warm. Do not boil.
  7. Remove the salmon from the oven. Drizzle the lemon herb sauce generously over the hot salmon fillets before serving.

Notes

  • For pan-searing: Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the salmon skin-side down for 4 minutes until the skin is crisp. Flip, top with garlic butter, and transfer the skillet to a 400°F oven for 6-8 minutes until done.
  • To check for doneness, insert a fork into the thickest part; if it flakes easily, it is ready.
  • Serve immediately with roasted asparagus or steamed rice to absorb the extra sauce.
