Follow these steps to make tender, flavorful roasted cauliflower coated in rich garlic butter.

Ingredients

Scale
  • 1 large head cauliflower
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice (optional)
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. Cut the cauliflower into bite-sized florets, aiming for pieces roughly the same size for even cooking.
  3. In a small bowl, combine the melted butter, minced garlic, salt, and pepper. Whisk until the garlic is evenly distributed.
  4. Place the cauliflower florets in a large bowl. Drizzle with olive oil and toss to coat.
  5. Pour the garlic butter mixture over the cauliflower. Toss everything together until every floret is lightly coated in the seasoning.
  6. Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to allow the edges to crisp.
  7. Roast for 20 to 25 minutes, tossing halfway through the cooking time. The cauliflower is done when it is tender when pierced with a fork and the edges show light browning.
  8. Remove from the oven. If using, immediately toss with lemon juice. Sprinkle with Parmesan cheese and fresh parsley before serving hot.

Notes

  • For crispier results, ensure your oven is fully preheated and do not skip the single-layer arrangement on the baking sheet.
  • If you prefer a stronger garlic flavor, add one extra clove of garlic to the butter mixture.
  • If you do not have fresh parsley, dried thyme can be substituted for a different herbal note.
