A simple recipe for roasting asparagus and mushrooms together with a rich garlic butter coating until tender-crisp and browned.

Ingredients

Scale
  • 1 pound fresh asparagus, trimmed
  • 1 pound cremini or white button mushrooms, cleaned and halved or quartered
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a small bowl, combine the melted butter, minced garlic, salt, pepper, and dried thyme. Mix well.
  3. Place the trimmed asparagus and prepared mushrooms on the baking sheet. Keep them in a single layer to promote roasting rather than steaming.
  4. Pour the garlic butter mixture evenly over the vegetables. Use your hands or tongs to toss everything until the vegetables are fully coated.
  5. Spread the vegetables into a single layer again, ensuring the mushrooms are cut-side down if possible for better browning.
  6. Roast for 12 to 15 minutes. Check the asparagus for tenderness; it should be tender-crisp. The mushrooms should show some browning.
  7. If the mushrooms need more color, you can move the baking sheet to the top rack for the last 2 minutes, watching closely to prevent the garlic from burning.
  8. Remove from the oven and serve immediately.

Notes

  • To prevent the asparagus from getting mushy, do not overcook it. Start checking at 12 minutes.
  • To help mushrooms brown instead of steam, ensure they are dry before tossing with butter and do not overcrowd the pan.
  • If you want a variation, toss with 2 tablespoons of grated Parmesan cheese and a squeeze of fresh lemon juice after roasting.
