Make this easy, flavorful garlic butter chicken and rice dinner entirely in one pot for minimal cleanup. This recipe delivers rich flavor quickly.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1.5 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil and 1 tablespoon of butter in a large, deep skillet or Dutch oven over medium-high heat. Add the chicken and cook until lightly browned on all sides, about 4-5 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the pot. Once melted, add the chopped onion and cook until softened, about 3 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  5. Stir in the uncooked rice, Italian seasoning, salt, and pepper. Cook, stirring constantly, for 1 minute to toast the rice slightly.
  6. Pour in the chicken broth. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pot.
  7. Once boiling, return the partially cooked chicken to the pot. Reduce the heat to low, cover the pot tightly, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during this time.
  8. Remove the pot from the heat. Keep it covered and let it rest for 5 minutes.
  9. Stir in the heavy cream and Parmesan cheese until the sauce is creamy.
  10. Garnish with fresh parsley before serving immediately.

Notes

  • Use low-sodium broth if you are watching your salt intake.
  • For a richer flavor, use chicken thighs instead of breasts.
  • If the rice seems too thick after resting, add a splash more broth or milk to reach your desired consistency.
