Make this quick and flavorful one-pan meal featuring tender chicken breasts and savory mushrooms coated in a rich garlic butter sauce. Perfect for a fast weeknight dinner.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the sliced mushrooms to the same skillet. Cook until they release their moisture and start to brown, about 5 minutes.
  4. Reduce the heat to medium. Add the butter and minced garlic to the skillet. Cook for 1 minute until the garlic is fragrant, stirring constantly. Do not let the garlic burn.
  5. Pour in the chicken broth and add the Italian seasoning. Scrape up any browned bits from the bottom of the pan. Let the sauce simmer and reduce slightly for 2 minutes.
  6. Return the cooked chicken to the skillet. Toss everything together to coat the chicken and mushrooms evenly with the garlic butter sauce. Cook for 1 minute to heat through.
  7. Remove from heat. Garnish with fresh parsley before serving.

Notes

  • Serve this skillet dinner over cooked rice, pasta, or with crusty bread to soak up the extra garlic butter sauce.
  • For a creamier sauce, stir in 2 tablespoons of heavy cream during the last minute of cooking.
  • You can substitute chicken thighs for breasts, adjusting the cooking time as needed.
