A rich, savory baked rice casserole that captures the deep flavor of French onion soup using caramelized onions and butter.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 teaspoon Worcestershire sauce
  • 2 cups cooked long-grain white rice
  • 1 cup shredded Gruyère cheese
  • 1/2 cup shredded Swiss cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onions. Cook slowly, stirring occasionally, for 20 to 25 minutes until the onions are deeply browned and caramelized. Stir in salt and pepper.
  3. In a large bowl, whisk together the cream of mushroom soup, beef broth, sour cream, and Worcestershire sauce until smooth.
  4. Fold in the cooked rice and the caramelized onions into the soup mixture until everything is combined.
  5. Spread the rice mixture evenly into the prepared baking dish.
  6. In a small bowl, mix the Gruyère and Swiss cheeses. Sprinkle the cheese mixture evenly over the top of the rice. Dot the top with the remaining 2 tablespoons of cold butter, cut into small pieces.
  7. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese topping is melted and lightly golden brown.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For quicker onion flavor, you can substitute the fresh onions with 1 packet of dry French Onion Soup mix stirred into the liquid ingredients.
  • Use leftover cooked rice or cook rice ahead of time to speed up the preparation.
  • This dish pairs well as a side for roasted chicken or steak.
