Ingredients

Scale
  • 8 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped cilantro
  • 12 large flour tortillas
  • Cooking spray

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. Add cooked sausage, cheeses, onion, bell pepper, and cilantro to the egg mixture. Stir to combine.
  3. Heat a lightly oiled skillet over medium heat.
  4. Pour about 1/2 cup of the egg mixture into the skillet. Cook, stirring occasionally, until the eggs are set. Repeat with the remaining egg mixture.
  5. Warm the tortillas according to package directions.
  6. Spoon about 1/2 cup of the egg mixture onto the center of each tortilla.
  7. Fold in the sides of the tortilla, then roll up tightly from the bottom to create a burrito.
  8. Wrap each burrito tightly in plastic wrap, then in aluminum foil.
  9. Place burritos in a freezer-safe bag or container and freeze for up to 3 months.
  10. To reheat, remove foil and plastic wrap. Wrap in a damp paper towel and microwave for 2-3 minutes, or until heated through.

Notes

  • You can customize the fillings with your favorite ingredients like potatoes or black beans.
  • Ensure burritos are completely cooled before wrapping for freezing to prevent ice crystals.
  • For a crispier exterior, you can pan-fry or bake the thawed burritos.
