Ingredients

Scale
  • 1.5 lb ground chicken breast
  • 1/2 cup panko breadcrumbs
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh mint
  • 2 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of 1 lemon
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, feta cheese, parsley, mint, minced garlic, egg, oregano, salt, pepper, and lemon zest.
  3. Mix gently with your hands until just combined. Do not overmix.
  4. Roll the mixture into uniform balls, about 1.5 inches in diameter. You should get about 18 to 20 meatballs.
  5. Place the meatballs on the prepared baking sheet and brush lightly with olive oil.
  6. Bake for 18 to 20 minutes, or until the internal temperature reaches 165°F (74°C) and the meatballs are lightly browned.
  7. Serve warm with your choice of Tzatziki sauce or alongside Lemon Orzo.

Notes

  • For meal prepping, store leftover meatballs in an airtight container in the refrigerator for up to 4 days.
  • You can substitute ground turkey for ground chicken if desired.
  • If you prefer grilling, cook over medium heat for about 10-12 minutes, turning often.
