Make elegant, piped potato swirls that are creamy inside and golden brown outside. This recipe uses butter, egg yolks, and cream for a rich flavor.

Ingredients

Scale
  • 2 lbs Russet potatoes, peeled and quartered
  • 8 Tbsp unsalted butter, softened
  • 4 large egg yolks
  • 1/2 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of nutmeg
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Place the peeled and quartered potatoes in a large pot and cover with cold, salted water.
  2. Bring the water to a boil and cook until the potatoes are very tender, about 15 to 20 minutes.
  3. Drain the potatoes completely and return them to the hot, empty pot over low heat for 1 minute, shaking occasionally to dry them out.
  4. Mash the potatoes thoroughly until completely smooth. You can use a ricer for the best texture.
  5. In a separate small saucepan, gently warm the heavy cream. Do not boil.
  6. Remove the pot from the heat. Add the softened butter to the mashed potatoes and mix until fully incorporated.
  7. Whisk the egg yolks lightly in a small bowl.
  8. Gradually beat the egg yolks into the potato mixture.
  9. Slowly mix in the warm heavy cream until the mixture is smooth and pipeable. Stir in the salt, pepper, and nutmeg.
  10. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  11. Transfer the potato mixture to a large piping bag fitted with a large star tip (like Wilton 1M).
  12. Pipe swirls or mounds onto the prepared baking sheet.
  13. Brush the tops of the potato swirls lightly with the beaten egg wash.
  14. Bake for 15 to 20 minutes, or until the edges are golden brown and crisp.

Notes

  • For a garlic flavor, add 1 clove of minced garlic to the cream while warming it, then strain before adding to the potatoes.
  • For Parmesan Duchess Potatoes, mix 1/4 cup of grated Parmesan cheese into the potato mixture before piping.
  • If the mixture is too soft to pipe, chill it for 15 minutes.
