Ingredients
Scale
1 (15 ounce) can sweet corn, drained
1 (10 ounce) can Rotel diced tomatoes and green chilies, drained
1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 cup mayonnaise
1 cup shredded cheddar cheese, plus more for topping
1/2 cup grated Parmesan cheese
1/2 cup chopped green onion
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Pinch of salt
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the drained corn, drained Rotel, softened cream cheese, sour cream, and mayonnaise. Mix until the ingredients are mostly smooth.
Stir in the cheddar cheese, Parmesan cheese, green onion, garlic powder, black pepper, and salt until everything is well combined.
Spread the mixture evenly into your prepared baking dish.
Top the dip with an extra layer of shredded cheddar cheese.
Bake for 20 to 25 minutes, or until the dip is hot and bubbly and the cheese topping is golden brown.
Let the dip cool for a few minutes before serving warm with tortilla chips or crackers.
Notes
For a spicy kick, add one diced jalapeno (seeds removed) to the mixture.
You can prepare this dip ahead of time; cover and refrigerate for up to 24 hours before baking. Add 5-10 minutes to the baking time if baking directly from the refrigerator.
This is a fantastic Crockpot Corn Dip base; transfer the mixture to a small slow cooker and cook on low for 2-3 hours until hot.
