Make this rich, velvety pub-style beer cheese dip on the stovetop in just 15 minutes. It is the ultimate game day appetizer, perfect for dipping soft pretzels, chips, or vegetables.

Ingredients

Scale
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup lager beer (like a pale ale or pilsner)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour to create a smooth paste, called a roux. Cook for one minute, stirring constantly.
  3. Slowly pour in the beer while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer and cook until it thickens slightly, about 3 to 5 minutes.
  4. Reduce the heat to low. Add the shredded cheddar and Monterey Jack cheeses one handful at a time, stirring until each addition is fully melted and smooth before adding the next. Do not allow the mixture to boil.
  5. Stir in the Dijon mustard, garlic powder, and cayenne pepper.
  6. Season with salt and black pepper to your taste.
  7. Serve the beer cheese dip immediately while warm with soft pretzels, chips, or fresh vegetables.

Notes

  • For a deeper flavor, use a darker beer like a stout or porter, but reduce the amount slightly to avoid overpowering the cheese.
  • Shred your own cheese from a block; pre-shredded cheese contains anti-caking agents that prevent the dip from becoming perfectly smooth.
  • If the dip thickens too much while sitting, whisk in a splash more beer or milk to restore the creamy consistency.
