Ingredients
Scale
3 cups cooked, shredded chicken (rotisserie works well)
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of celery soup
1 cup chicken broth
1 cup frozen mixed vegetables (peas, carrots, corn)
1/2 cup sour cream
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1 cup shredded sharp cheddar cheese, divided
1 package (10 oz) refrigerated biscuit dough (or use a copycat Cheddar Bay Biscuit mix for topping)
1 tablespoon melted butter (for brushing)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the shredded chicken, cream of chicken soup, cream of celery soup, chicken broth, frozen vegetables, sour cream, thyme, pepper, and garlic powder. Mix until everything is well combined.
Stir in 3/4 cup of the shredded cheddar cheese into the chicken mixture. Pour this mixture evenly into the prepared baking dish.
Cut the refrigerated biscuit dough into quarters. Arrange the biscuit pieces over the top of the chicken mixture, leaving small spaces between them.
Brush the tops of the biscuits lightly with melted butter. Sprinkle the remaining 1/4 cup of cheddar cheese over the biscuits.
Bake for 25 to 30 minutes, or until the biscuits are golden brown and cooked through and the filling is bubbly.
Let the cobbler rest for 5 minutes before serving.
Notes
For a Cheddar Bay Biscuit copycat topping, mix the biscuit dough with 1/4 cup melted butter, 1/2 teaspoon garlic powder, and 1/4 teaspoon paprika before placing it on top of the casserole.
You can substitute cream of mushroom soup for cream of celery if you prefer.
Use leftover cooked chicken or quickly bake 1 pound of chicken breasts and shred them.
