This easy burrito bake casserole brings all the bold flavors of your favorite burritos into one simple, cheesy, baked dish. It is a perfect family meal for busy weeknights.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (10 ounces) red enchilada sauce
  • 1 cup water
  • 8 medium flour tortillas, cut into quarters
  • 2 cups shredded Mexican cheese blend
  • 1 cup cooked white rice (optional)
  • 1 cup salsa (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and onion. Cook, breaking up the meat, until the beef is browned and the onion is soft, about 6 to 8 minutes. Drain off any excess grease.
  3. Stir the taco seasoning mix, rinsed black beans, enchilada sauce, and water into the skillet with the beef mixture. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Spread a thin layer of the meat mixture on the bottom of the prepared baking dish.
  5. Arrange one-third of the cut tortillas over the meat layer. If using, sprinkle half of the cooked rice over the tortillas.
  6. Spoon half of the remaining meat mixture evenly over the tortilla layer. Sprinkle with one-third of the shredded cheese.
  7. Repeat the layers: one-third of the tortillas, the remaining rice (if using), the rest of the meat mixture, and another third of the cheese.
  8. Top with the final layer of tortillas. Pour the remaining enchilada sauce lightly over the top layer of tortillas.
  9. Bake for 20 minutes. Remove from the oven, sprinkle with the remaining cheese, and return to the oven for 5 to 10 more minutes, or until the cheese is melted and bubbly.
  10. Let the cheesy burrito bake rest for 5 minutes before slicing and serving with salsa.

Notes

  • You can substitute ground beef with ground turkey or shredded cooked chicken for a different flavor profile.
  • For a make-ahead option, assemble the entire casserole, cover it tightly, and refrigerate for up to 24 hours before baking. Add about 10 minutes to the initial covered baking time if baking straight from the refrigerator.
  • Serve this Mexican comfort food bake with toppings like sour cream, guacamole, or chopped cilantro.
