Follow these steps to make broccoli that is perfectly crispy and coated with savory Parmesan cheese using high-heat oven roasting.

Ingredients

Scale
  • 1 large head broccoli, cut into small, uniform florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced (optional)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the broccoli florets in a large bowl. Drizzle with olive oil and toss until every piece is lightly coated.
  3. Sprinkle the salt and pepper over the oiled broccoli and toss again.
  4. Spread the broccoli in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crisping.
  5. Roast for 15 minutes.
  6. Remove the pan from the oven. Sprinkle the grated Parmesan cheese (and minced garlic, if using) evenly over the broccoli. Gently toss the florets on the pan.
  7. Return the pan to the oven and roast for another 5 to 10 minutes, or until the edges of the broccoli are dark brown and crispy and the cheese is melted and lightly browned.
  8. Remove from the oven and serve immediately.

Notes

  • Cut the florets small and keep them relatively dry before oiling to promote maximum crispness.
  • For extra crunch, you can add 1 teaspoon of cornstarch to the oil and toss before roasting.
  • If you prefer a stronger garlic flavor, add the minced garlic during the last 5 minutes of cooking to prevent burning.
