- 1.5 lb Brussels sprouts
- 3 Tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup grated Parmesan cheese
- 1 clove garlic, minced (optional)
- Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
- Trim the ends off the Brussels sprouts and remove any loose or discolored outer leaves.
- Cut the sprouts in half lengthwise. For larger sprouts, cut them into quarters.
- Place the cut sprouts in a large bowl. Drizzle with olive oil, salt, and pepper. Toss until all sprouts are evenly coated.
- Spread the sprouts in a single layer on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary for maximum crispiness.
- Roast for 15 minutes.
- Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the sprouts. If using, sprinkle the minced garlic over the cheese.
- Return the pan to the oven and roast for another 5 to 10 minutes, or until the sprouts are tender inside and the cheese is melted and lightly browned.
- Serve immediately.
Notes
- Drying the sprouts thoroughly before oiling helps them crisp up better during roasting.
- For extra crunch, you can toss the sprouts with 1 teaspoon of baking powder before adding oil and salt; this promotes browning.
- If you prefer a sharper flavor, add a drizzle of balsamic glaze after removing them from the oven.
