Ingredients
Scale
2 lbs chicken drumsticks, skin on
1 tablespoon baking powder (aluminum-free for best results)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon grated fresh ginger
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with foil and place a wire rack on top of the foil.
Pat the chicken drumsticks completely dry using paper towels. This step is key for crispiness.
In a medium bowl, toss the dry drumsticks with baking powder, salt, and pepper until evenly coated.
Arrange the coated drumsticks on the wire rack, ensuring they do not touch.
Bake for 25 minutes at 425 degrees Fahrenheit.
While the chicken bakes, prepare the sauce: In a small saucepan, combine the honey, soy sauce, minced garlic, apple cider vinegar, and ginger. Bring the mixture to a simmer over medium heat, stirring until the honey dissolves. Cook for 2 minutes until slightly thickened. Remove from heat.
After the initial 25 minutes of baking, brush half of the honey garlic sauce over the drumsticks.
Return the chicken to the oven and bake for another 10 minutes.
Remove the chicken, brush with the remaining sauce, and bake for a final 5 to 10 minutes, watching closely to prevent the honey from burning, until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is deeply browned and crisp.
Let the drumsticks rest for 5 minutes before serving.
Notes
For extra crispiness, you can broil the chicken for the last 1-2 minutes, watching constantly.
If you prefer a thicker glaze, simmer the reserved sauce longer until it reduces further.
Use a meat thermometer to confirm the chicken is fully cooked for safety.
