Make this easy baked shrimp toast for a crispy, savory appetizer or snack. This recipe offers a lighter alternative to frying and is perfect for entertaining.

Ingredients

Scale
  • 1 pound raw shrimp, peeled and deveined
  • 8 slices white bread or sandwich bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 scallion, thinly sliced
  • 1 large egg white
  • 1 tablespoon cornstarch
  • Pinch of white pepper
  • 1 tablespoon olive oil or melted butter for brushing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the shrimp spread: Place the shrimp, egg white, cornstarch, soy sauce, sesame oil, ginger, minced garlic, scallion, and white pepper into a food processor. Pulse until the mixture forms a coarse paste. Do not over-process; you want some texture remaining.
  3. Trim the crusts from the slices of bread. Cut each slice of bread in half diagonally to create triangles.
  4. Spread a generous, even layer of the shrimp mixture onto one side of each bread triangle.
  5. Place the bread triangles, shrimp-side up, onto the prepared baking sheet.
  6. Lightly brush the tops of the shrimp mixture with olive oil or melted butter. This helps them crisp up nicely.
  7. Bake for 12 to 15 minutes, or until the shrimp topping is cooked through and the edges of the bread are golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving. Serve warm with your favorite dipping sauce.

Notes

  • For extra crunch, you can lightly toast the bread slices for 3 minutes before applying the shrimp spread.
  • If you do not have a food processor, finely chop the shrimp by hand until it reaches a paste consistency.
  • This recipe works well for make ahead appetizers; assemble the toast completely and store it covered in the refrigerator for up to 4 hours before baking.
