Ingredients
Scale
4 large Russet potatoes, scrubbed
2 tablespoons olive oil
1 teaspoon cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon dried oregano
4 cloves fresh garlic, minced
1/2 cup grated Parmesan cheese, finely grated
Instructions
Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper, leaving space between the wedges later.
Cut the potatoes lengthwise into 8 wedges each. Do not peel them.
Place the cut wedges in a large bowl and cover them completely with cold water. Let them soak for at least 30 minutes. This removes excess starch and helps crisp them.
Drain the potatoes thoroughly and pat them completely dry using paper towels or a clean kitchen towel. Moisture prevents crisping.
In the same bowl, toss the dry wedges with olive oil, cornstarch, salt, pepper, garlic powder, and oregano until evenly coated.
Place the seasoned wedges on the prepared baking sheets in a single layer. Do not let them touch. This spacing is key for crispiness.
Bake for 20 minutes.
Remove the sheets from the oven. Toss the wedges gently. Add the minced fresh garlic and half of the grated Parmesan cheese, tossing again to coat.
Return the wedges to the oven and bake for another 15 to 20 minutes, or until golden brown and crisp.
Remove from the oven. Immediately sprinkle the remaining Parmesan cheese over the hot wedges and toss lightly. Serve warm.
Notes
For extra crispiness, you can flip the wedges halfway through the second baking period.
Use finely grated Parmesan cheese; pre-shredded cheese often contains anti-caking agents that prevent a good crust.
Serve these wedges with a side of ranch dressing or a simple garlic aioli for dipping.
