Ingredients
Scale
2 ripe avocados, firm but yielding
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs, beaten
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray.
Prepare your dredging stations. In one shallow bowl, mix the flour, garlic powder, paprika, salt, and pepper. In another shallow bowl, place the beaten eggs. In a third shallow bowl, place the panko breadcrumbs.
Cut the avocados in half and remove the pits. Peel the avocados and cut them into 1/2-inch thick wedges.
Gently coat each avocado wedge first in the flour mixture, tapping off any excess.
Next, dip the floured avocado into the beaten eggs, ensuring it is fully coated.
Finally, roll the egg-coated avocado in the panko breadcrumbs, pressing gently to adhere.
Place the breaded avocado fries in a single layer on the prepared baking sheet.
Lightly spray the tops of the fries with cooking spray.
Bake for 15-20 minutes, or until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
Notes
Avocados should be ripe but still firm to hold their shape.
You can add other seasonings to the flour or breadcrumbs, such as onion powder or cayenne pepper.
For extra crispiness, you can flip the fries halfway through baking.
Serve with a side of sriracha mayo, ranch dressing, or a cilantro-lime dipping sauce.
