Make this rich and comforting Creamy Crack Chicken Gnocchi for an easy weeknight dinner. This one-pan meal combines tender chicken, pillowy gnocchi, bacon, and a savory ranch-cream cheese sauce for maximum flavor with minimal cleanup.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi
  • 1 cup low-sodium chicken broth
  • 8 ounces cream cheese, cut into cubes
  • 1 (1 ounce) packet dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Add the crumbled bacon to the skillet and cook until crisp. Remove the bacon with a slotted spoon, leaving about 1 tablespoon of bacon grease in the pan.
  3. Add the uncooked gnocchi and chicken broth to the skillet. Bring to a simmer, stirring occasionally, for about 5 minutes until the gnocchi starts to soften.
  4. Reduce the heat to low. Stir in the cream cheese cubes, dry ranch seasoning mix, and heavy cream until the cream cheese melts and the sauce is smooth.
  5. Stir in the cooked chicken, cheddar cheese, and Parmesan cheese. Continue stirring until the cheese is fully melted and the sauce coats the gnocchi.
  6. If using, stir in the fresh spinach until it wilts, about 1 minute. Taste the sauce and add more salt or pepper if needed.
  7. Serve immediately, topped with the reserved crispy bacon crumbles. This is the ultimate comfort food you need tonight.

Notes

  • For a tangier flavor, substitute half of the heavy cream with sour cream.
  • If you prefer a thicker sauce, let the mixture simmer uncovered for an extra 3-5 minutes at the end.
  • You can substitute pre-cooked rotisserie chicken for the raw chicken to save 10 minutes of cooking time.
