Make a rich and comforting soup featuring soft potato gnocchi and shredded chicken, similar to a popular restaurant version.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup fresh spinach, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Whisk in the flour and cook for 1 minute, stirring constantly.
  4. Slowly whisk in the chicken broth until smooth. Add Italian seasoning, salt, and pepper.
  5. Add the raw chicken breasts to the pot. Bring the soup to a simmer, then reduce heat to low, cover, and cook for 15 minutes, or until the chicken is cooked through.
  6. Remove the chicken breasts from the pot. Shred the chicken using two forks, then return the shredded chicken to the soup.
  7. Stir in the heavy cream and bring the soup back to a gentle simmer. Do not boil after adding cream.
  8. Add the potato gnocchi and cook according to package directions, usually 3 to 5 minutes, until they float.
  9. Stir in the chopped spinach during the last minute of cooking until wilted. Taste and adjust seasoning if needed before serving.

Notes

  • You can substitute store-bought rotisserie chicken for raw chicken breasts to save cooking time. Add the shredded rotisserie chicken when you add the cream.
  • If you prefer a thicker soup, let it simmer uncovered for a few extra minutes after adding the gnocchi.
  • For a low-lactose option, substitute half-and-half for heavy cream, though the texture will be slightly thinner.
