Ingredients
Scale
1 cup low-fat cottage cheese
4 ounces sharp cheddar cheese, shredded
1/4 cup milk (or water, for blending)
1 tablespoon taco seasoning (or chili powder and cumin mix)
1/4 teaspoon salt
1/4 cup diced green chiles (optional)
Instructions
Place the cottage cheese, shredded cheddar cheese, milk (or water), taco seasoning, and salt into a high-speed blender.
Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed. This may take 1 to 2 minutes to eliminate all lumps.
If using, pulse in the diced green chiles after the base is smooth.
Transfer the mixture to a microwave-safe bowl.
Microwave on high for 30 to 60 seconds, stirring halfway through, until the queso is heated through and extra melty.
Serve immediately with tortilla chips, fresh vegetables, or as a topping for tacos and nachos.
Notes
For the creamiest texture, use a powerful blender. If you do not have one, blend for longer until you reach your desired smoothness.
You can adjust the seasoning to your preference. Add a pinch of cayenne pepper for extra heat.
This dip is excellent served warm but also works well cold as a high-protein spread.
This recipe is a great base for a healthy nacho topping.
