- 1 cup vegetable oil
- 1/2 cup water
- 1/4 cup white wine vinegar
- 1/4 cup distilled white vinegar
- 2 tablespoons granulated sugar
- 1 tablespoon dried minced onion
- 1 tablespoon dried minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground celery seed
- 1/4 cup grated Parmesan cheese
- Combine the vegetable oil, water, white wine vinegar, and distilled white vinegar in a blender.
- Add the sugar, minced onion, minced garlic, oregano, salt, pepper, and celery seed to the blender.
- Blend the mixture on medium speed for about 30 seconds until it starts to emulsify slightly.
- Add the grated Parmesan cheese.
- Blend again until the dressing is smooth and creamy. Stop blending as soon as it is combined to prevent the cheese from becoming pasty.
- Pour the dressing into an airtight container.
- Refrigerate for at least 2 hours before serving to allow the flavors to fully develop.
Notes
- For the best flavor, let the dressing rest in the refrigerator overnight.
- If the dressing separates after sitting, shake the container well or briefly blend it again before use.
- You can substitute mayonnaise for some of the oil if you prefer a thicker dressing, but this recipe aims for the classic Olive Garden consistency.
