Ingredients
Scale
1.5 lb boneless, skinless chicken breasts or thighs
1/4 cup lime juice, fresh
2 tablespoons olive oil
1 tablespoon adobo sauce from canned chipotles in adobo
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon smoked paprika
Instructions
If using chicken breasts, slice them horizontally to create thinner cutlets for even cooking.
In a medium bowl, whisk together the lime juice, olive oil, adobo sauce, cumin, oregano, salt, pepper, garlic powder, onion powder, and smoked paprika to create the marinade.
Place the chicken pieces into a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
Refrigerate and marinate for at least 30 minutes, or up to 4 hours for deeper flavor. Do not marinate longer than 4 hours due to the lime juice.
Preheat your grill or a heavy skillet (like cast iron) over medium-high heat. Lightly oil the cooking surface.
Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.
Cook the chicken for 5 to 7 minutes per side, depending on thickness, until the internal temperature reaches 165 degrees Fahrenheit and you see slight char marks.
Remove the chicken from the heat and let it rest on a cutting board for 5 minutes before slicing against the grain.
Notes
For a smokier flavor, add 1/4 teaspoon of liquid smoke to the marinade mixture.
If you prefer shredded chicken for bowls, cook the chicken slightly longer and then shred it using two forks before serving.
You can bake this chicken at 400 degrees Fahrenheit for 18 to 22 minutes instead of grilling.
