Make these soft, chewy Christmas sprinkle sugar cookies without chilling the dough. They are easy to prepare, packed with festive color, and perfect for holiday baking and cookie exchanges.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup Christmas sprinkles (red, green, and white jimmies or nonpareils)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This is the base for your buttery sugar cookies.
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the Christmas sprinkles. You want the dough to be colorful but not overworked.
  7. Scoop rounded tablespoons of dough and roll them into balls. Place them on the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Gently flatten each dough ball slightly with the bottom of a glass or your palm.
  9. Bake for 9 to 11 minutes, or until the edges are lightly golden. For soft holiday sugar cookies, err on the side of underbaking slightly.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra festive cookies, roll the dough balls in extra red and green sprinkles before flattening them.
  • These bakery style Christmas cookies freeze well before baking. Place dough balls on a tray, freeze until solid, then transfer to a freezer bag. Bake from frozen, adding 2-3 minutes to the bake time.
  • If you want a slightly chewier texture, substitute 1/4 cup of the granulated sugar with packed light brown sugar.
