Make this creamy, cheesy Chicken Cobbler Casserole topped with a Cheddar Bay biscuit crust. It is a hearty, easy weeknight dinner that brings comfort to your table.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup sharp cheddar cheese, shredded
  • 1 (16.3 ounce) can refrigerated biscuit dough (like the kind used for Cheddar Bay Biscuit Topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, cream of celery soup, chicken broth, and sour cream. Mix until everything is smooth and combined.
  3. Stir in the frozen mixed vegetables, dried thyme, black pepper, and garlic powder. Mix gently to distribute the vegetables evenly.
  4. Pour the creamy chicken mixture into your prepared baking dish.
  5. Sprinkle the shredded cheddar cheese evenly over the top of the chicken mixture.
  6. Open the can of refrigerated biscuit dough. Cut each biscuit into quarters.
  7. Arrange the biscuit pieces over the cheese layer, leaving small gaps between them so they can expand while baking. This creates your savory biscuit topped chicken layer.
  8. Bake for 25 to 30 minutes, or until the filling is bubbly and the biscuits are golden brown and cooked through.
  9. Let the Cheesy Chicken Bake rest for 5 minutes before you serve this Comfort Food Dinner.

Notes

  • For an extra boost of flavor mimicking Red Lobster style, brush the tops of the biscuits with melted butter mixed with a pinch of garlic powder and dried parsley before baking.
  • If you prefer to make this completely from scratch, you can substitute the canned soups with a homemade white sauce base thickened with flour and seasoned well.
  • This recipe is a fantastic Weeknight Chicken Dinner because you can use leftover cooked chicken or rotisserie chicken to save time.
