Make this simple, comforting ground beef pasta dish entirely in one skillet. It features a rich garlic sauce and melted cheese for a quick weeknight meal.
Heat the olive oil in a large, deep skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
Add the chopped onion to the skillet and cook until softened, about 4 minutes.
Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the beef broth and bring the mixture to a boil.
Add the dry pasta to the skillet, stirring to submerge it in the liquid.
Reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
Remove the skillet from the heat. Stir in the heavy cream, cheddar cheese, and Parmesan cheese until the cheese melts and the sauce thickens.
Taste and adjust seasoning if needed. Garnish with fresh parsley before serving directly from the skillet.
Notes
For a sharper flavor, substitute Monterey Jack for half of the cheddar cheese.
If the sauce seems too thick after cooking, add a splash of milk or extra broth until you reach your desired consistency.
You can use any short, sturdy pasta shape in this recipe.
