- 2 tablespoons olive oil
- 4 boneless pork chops (about 1 inch thick)
- 1 large yellow onion, thinly sliced
- 2 medium apples, cored and sliced
- 1/4 cup apple cider
- 2 tablespoons butter
- 1 tablespoon fresh thyme leaves
- Salt and freshly ground black pepper to taste
- Pat the pork chops dry and season them generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the pork chops for 2-3 minutes per side, until golden brown. Remove from skillet and set aside.
- Add the sliced onion to the same skillet and cook over medium heat, stirring occasionally, until softened and caramelized, about 15-20 minutes.
- Add the sliced apples to the skillet with the onions and cook for another 5 minutes, until slightly softened.
- Pour in the apple cider and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
- Return the pork chops to the skillet, nestling them among the onions and apples.
- Add the butter and thyme to the skillet.
- Cover the skillet and cook for another 5-7 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).
- Season with additional salt and pepper if needed.
Notes
- For deeper flavor, you can caramelize the onions ahead of time.
- Feel free to use a mix of apple varieties for different flavors.
- Ensure your pork chops are not overcooked to maintain tenderness.
