Ingredients
Scale
1 cup quinoa, rinsed
2 cups water or vegetable broth
1 pint cherry tomatoes, halved
8 ounces fresh mozzarella balls, halved or quartered
1/2 cup fresh basil leaves, chopped
1/4 cup extra virgin olive oil
2 tablespoons balsamic glaze
Salt, to taste
Black pepper, to taste
Instructions
Cook the quinoa: Combine the rinsed quinoa and water or broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the liquid is absorbed. Let stand, covered, for 5 minutes, then fluff with a fork.
Prepare the Caprese ingredients: While the quinoa is cooking, halve the cherry tomatoes and the fresh mozzarella balls. Chop the fresh basil leaves.
Assemble the salad: In a large bowl, combine the cooked quinoa, halved cherry tomatoes, and mozzarella balls.
Add the basil and dressing: Sprinkle the chopped basil over the salad. Drizzle with extra virgin olive oil and balsamic glaze.
Season and serve: Season with salt and black pepper to taste. Toss gently to combine. Serve immediately or chill for later.
Notes
For a creamier texture, use small fresh mozzarella pearls.
If you don’t have balsamic glaze, you can reduce balsamic vinegar in a small saucepan until thickened.
Feel free to add other vegetables like cucumber or red onion for extra crunch.
