Make this hearty, creamy Buffalo Chicken Chili easily in your slow cooker. It is a simple, spicy comfort food perfect for game days.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (10 ounce) can mild diced green chilies, undrained
  • 1 cup chicken broth
  • 1/2 cup Buffalo wing sauce
  • 1/4 cup ranch dressing or blue cheese dressing
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: Shredded cheddar cheese, sour cream, green onions

Instructions

  1. Place the chicken breasts, black beans, kidney beans, diced tomatoes with green chilies, and green chilies into the basin of your slow cooker.
  2. Pour in the chicken broth and Buffalo wing sauce. Stir in the ranch or blue cheese dressing, chili powder, cumin, and garlic powder.
  3. Stir everything together until combined.
  4. Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  5. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
  6. Add the cubed cream cheese to the chili. Stir gently until the cream cheese melts and the chili becomes creamy.
  7. Taste the chili and add salt and pepper as needed.
  8. Serve hot with your choice of toppings.

Notes

  • For a thicker chili, remove about 1 cup of the chili mixture (before adding cream cheese), blend until smooth, and stir it back into the slow cooker.
  • If you prefer more heat, increase the amount of Buffalo wing sauce or add a dash of cayenne pepper.
  • This recipe freezes well. Cool completely before transferring to an airtight container for freezing.
