Ingredients

Scale
  • 1 box brownie mix
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water
  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the brownie batter according to the box directions, using the oil, eggs, and water.
  3. Pour the brownie batter into a greased 9-inch springform pan.
  4. In a separate bowl, beat the cream cheese and granulated sugar until smooth.
  5. Beat in the eggs one at a time, then stir in the vanilla extract and sour cream.
  6. Pour the cream cheese mixture evenly over the brownie batter.
  7. Bake for 50-60 minutes, or until the cheesecake is set and the center is almost firm.
  8. Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour.
  9. Remove from the oven and let it cool completely on a wire rack.
  10. Refrigerate for at least 4 hours, or preferably overnight, before serving.

Notes

  • For a fudgier brownie layer, use slightly less water than called for on the brownie mix box.
  • Ensure your cream cheese and eggs are at room temperature for a smoother batter.
  • Don’t overmix the cheesecake batter once the eggs are added.
  • Chilling the cheesecake is crucial for the best texture and flavor.
