Ingredients
Scale
8 ounces sharp cheddar cheese, shredded
4 ounces Monterey Jack cheese, shredded
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1/2 cup lager beer (or non-alcoholic beer)
1/4 cup milk
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Pinch of cayenne pepper
Instructions
Shred both cheeses and set them aside. This helps them melt evenly.
In a medium saucepan over medium heat, melt the butter.
Whisk in the flour and cook for one minute, stirring constantly to create a roux.
Slowly pour in the beer while whisking continuously to prevent lumps. Cook until the mixture thickens slightly, about 2 minutes.
Whisk in the milk, Dijon mustard, garlic powder, and cayenne pepper. Heat until the sauce just begins to simmer.
Reduce the heat to low. Add the shredded cheese, a handful at a time, stirring constantly until each addition is fully melted and smooth before adding more. Do not let the mixture boil.
Once all the cheese is incorporated and the dip is creamy, remove it from the heat.
Serve this hot cheese dip recipe immediately with soft pretzels, tortilla chips, or fresh vegetables.
Notes
For the best texture, shred your own block cheese instead of using pre-shredded varieties, which contain anti-caking agents.
You can use non-alcoholic beer if you prefer a milder flavor or need a non-alcoholic option for your party.
If the dip thickens too much while sitting, whisk in a splash of milk or beer over low heat to restore creaminess.
