Create delicious vegan pulled pork-style sandwiches with tender, flavorful jackfruit. These BBQ pulled jackfruit sandwiches are easy to make and perfect for a casual meal.

Ingredients

Scale
  • 2 cans (20 ounces each) young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup your favorite BBQ sauce
  • 1/4 cup water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 4-6 sandwich buns
  • Optional toppings: coleslaw, pickles, red onion

Instructions

  1. Prepare the jackfruit: Drain and rinse the jackfruit. Remove any tough core pieces and seeds. Shred the jackfruit pieces with your fingers or two forks.
  2. Sauté aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Cook the jackfruit: Add the shredded jackfruit to the skillet. Cook for 5-7 minutes, stirring occasionally, until it starts to brown slightly.
  4. Add BBQ sauce and seasonings: Stir in the BBQ sauce, water, apple cider vinegar, smoked paprika, chili powder, and black pepper. Bring to a simmer.
  5. Simmer and shred: Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the sauce. You can shred it further with forks if desired.
  6. Season: Taste and add salt if needed.
  7. Assemble sandwiches: Toast the sandwich buns if desired. Spoon the BBQ pulled jackfruit mixture onto the bottom buns. Add your favorite toppings like coleslaw, pickles, or red onion. Top with the other half of the bun.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the BBQ mixture.
  • You can cook the pulled jackfruit in a slow cooker on low for 4-6 hours or on high for 2-3 hours.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
