- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 thin lemon slices for topping
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
- Pat the cod fillets dry with paper towels. Place them in the prepared baking dish.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper.
- Spoon the oil mixture evenly over the top of each cod fillet.
- Place one thin lemon slice on top of each fillet.
- Bake for 12 to 15 minutes, or until the fish flakes easily with a fork. Cooking time depends on the thickness of the fillets.

- You can substitute fresh herbs for dried herbs, using double the amount specified.
- For a complete meal, add asparagus or cherry tomatoes to the baking dish around the fish before baking.
