Ingredients
Scale
2 slices bread (sourdough or brioche recommended)
3 slices bacon
1 large egg
1 ounce sharp cheddar cheese, sliced or shredded
1 teaspoon butter or oil
Salt and black pepper to taste
Instructions
Cook the bacon in a skillet over medium heat until crisp. Remove the bacon and set it on a paper towel-lined plate. Keep about 1 tablespoon of bacon grease in the skillet, or add butter if needed.
Heat the skillet over medium-low heat. Crack the egg into the skillet. Season with salt and pepper.
Fry the egg until the whites are set and the yolk reaches your desired doneness (runny or firm).
While the egg cooks, lightly toast the bread slices if desired.
Place the cheddar cheese on one slice of bread. Place the cooked bacon on top of the cheese.
Carefully slide the fried egg onto the bacon layer.
Top with the second slice of bread. Slice in half and serve immediately.
Notes
For a runnier yolk, cook the egg for about 2 minutes on medium-low heat.
If you prefer melted cheese, place the cheese on the bread while the bacon is still hot, or briefly place the assembled sandwich under a broiler for 30 seconds.
Use mayonnaise or hot sauce on the bread slices for extra flavor.
