Ingredients
Scale
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon (for dough)
2 medium Granny Smith apples, peeled and finely diced
1/4 cup brown sugar, packed
1 tablespoon unsalted butter (for filling)
1/2 teaspoon ground cinnamon (for filling)
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch
1 tablespoon water
1 egg, beaten (for egg wash)
2 tablespoons coarse sugar (for topping)
Instructions
Prepare the apple filling: In a small saucepan, melt 1 tablespoon of butter over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5 to 7 minutes until apples soften slightly.
In a small bowl, whisk together cornstarch and water to create a slurry. Pour the slurry into the apples and cook for 1 minute until the mixture thickens. Remove from heat and let cool completely.
Prepare the cookie dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Preheat your oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
Scoop about 1 1/2 tablespoons of dough for each cookie. Flatten the dough slightly in your palm. Place about 1 teaspoon of the cooled apple filling in the center.
Fold the dough over the filling to create a half-moon shape, pinching the edges firmly to seal. You can use a fork to crimp the edges for a pie crust look.
Place the sealed cookies on the prepared baking sheets. Brush the tops lightly with the beaten egg wash and sprinkle with coarse sugar.
Bake for 10 to 12 minutes, or until the edges are light golden brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a shortcut, you can use one sheet of refrigerated, unbaked pie crust instead of making the dough from scratch. Cut the crust into circles and proceed with filling and sealing as described in step 6.
If you prefer a richer flavor, add 1 teaspoon of caramel sauce to the cooled apple filling.
If you want a lattice top, roll out a small portion of leftover dough very thin and cut thin strips to place over the filled cookies before baking.
