You get all the flavor of a classic apple fritter baked into a soft, sliceable loaf. This moist apple loaf cake is layered with tender apples and cinnamon sugar, finished with a simple vanilla glaze.

Ingredients

Scale
  • ½ cup (1 stick) butter, softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ teaspoons baking powder
  • Pinch of salt
  • ½ cup milk
  • 2 apples, peeled and chopped (use half Granny Smith, half Honeycrisp for best results)
  • 2 tablespoons granulated sugar (for apples)
  • ⅓ cup light brown sugar (for cinnamon swirl)
  • 2 teaspoons ground cinnamon (for cinnamon swirl)
  • ½ cup powdered sugar (for icing)
  • 1–3 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9×5-inch loaf pan.
  2. In a small bowl, mix the light brown sugar and ground cinnamon to create the cinnamon sugar. Set this aside.
  3. Toss the chopped apples with the 2 tablespoons of granulated sugar. Set the apples aside.
  4. Make the batter: Cream the softened butter and granulated sugar together until the mixture is light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Add the dry ingredients to the wet ingredients alternately with the milk, mixing only until the ingredients are just combined. Do not overmix your batter.
  7. Assemble the loaf: Spread half of the batter evenly into the prepared loaf pan. Top this layer with half of the sugared apples and half of the cinnamon sugar mixture.
  8. Repeat the layering process with the remaining batter, apples, and cinnamon sugar.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool further.
  11. Make the icing: Whisk the powdered sugar with 1 tablespoon of milk. Add more milk, one teaspoon at a time, until you reach a smooth, pourable consistency.
  12. Drizzle the vanilla glaze over the slightly warm or fully cooled loaf. Slice and enjoy your delicious apple fritter bread.

Notes

  • Using a mix of tart (Granny Smith) and sweet (Honeycrisp) apples gives you the perfect balance of flavor in this homemade apple bread.
  • Allow the loaf to cool for at least 15 minutes before slicing. This helps the layers set and prevents the loaf from crumbling.
  • This sweet breakfast bake is wonderful served warm with coffee.
