- 2 medium zucchini
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Wash and trim the ends of the zucchini. Cut the zucchini into spears about 1/4 inch thick.
- In a medium bowl, toss the zucchini spears with olive oil until lightly coated.
- In a separate small bowl, mix the grated Parmesan cheese, garlic powder, salt, and pepper.
- Sprinkle the cheese mixture over the zucchini and toss gently until the spears are evenly coated.
- Preheat your air fryer to 380°F (195°C).
- Place the coated zucchini in a single layer in the air fryer basket. Do not overcrowd the basket; cook in batches if necessary.
- Air fry for 8 to 10 minutes, shaking the basket halfway through, until the zucchini is tender inside and crispy outside.
- Remove from the air fryer and serve immediately.
Notes
- For extra crispiness, you can lightly spray the coated zucchini with cooking spray before the first 5 minutes of cooking.
- If you skip the Parmesan, you can use 1 tablespoon of panko breadcrumbs mixed with the seasonings for a similar texture.
- Do not wash the zucchini until just before you cut it. Excess moisture prevents crisping.
