Make tender stuffed bell peppers quickly in your air fryer with this simple recipe. This method cooks faster than an oven and yields a great texture.

Ingredients

Scale
  • 4 medium bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef (or substitute with lentils for vegetarian)
  • 1/2 cup cooked white rice
  • 1/2 cup tomato sauce
  • 1/4 cup chopped onion
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup shredded mozzarella cheese (optional topping)

Instructions

  1. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Lightly brush the inside of the peppers with olive oil.
  2. In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
  3. Mix the cooked beef, rice, tomato sauce, oregano, garlic powder, salt, and pepper in a bowl. This is your filling.
  4. Place the pepper halves in the air fryer basket. Arrange them so they fit snugly but do not overlap significantly.
  5. Spoon the filling evenly into each pepper half. Do not overfill.
  6. Air fry at 375°F (190°C) for 15 minutes.
  7. Carefully check the peppers for tenderness. If they are not soft enough, continue cooking for another 3 to 5 minutes.
  8. If using cheese, sprinkle it on top during the last 2 minutes of cooking.
  9. Remove carefully from the air fryer and serve hot.

Notes

  • For low-carb stuffed peppers, replace the rice with cauliflower rice or use extra ground meat and vegetables.
  • If your air fryer basket is small, you may need to cook the peppers in two batches.
  • To prevent the filling from drying out, you can place a teaspoon of water in the bottom of the air fryer basket before starting.
