Ingredients
Scale
1 tablespoon olive oil
1 pound cooked corned beef, chopped
2 cups cooked potatoes, diced (about 1/2 inch pieces)
1/2 cup yellow onion, diced
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Pinch of salt (optional, as corned beef is salty)
2 large eggs (for serving)
Instructions
Prepare your ingredients: Ensure your potatoes are already cooked (boiled or roasted) and diced. Chop the corned beef and dice the onion.
In a bowl, combine the chopped corned beef, diced potatoes, diced onion, olive oil, black pepper, and garlic powder. Mix gently to coat everything evenly.
Preheat your air fryer to 380°F (195°C) for 3 minutes.
Place the hash mixture into the air fryer basket in a single layer, or in two batches if necessary, to promote crisping. Do not overcrowd the basket.
Air fry for 10 minutes.
Open the basket, shake well to redistribute the ingredients, and continue air frying for another 5 to 8 minutes, or until the potatoes are golden brown and crispy.
While the hash finishes, cook your eggs to your preference (fried or poached work well).
Serve the crispy corned beef hash immediately topped with a fried egg.
Notes
For the crispiest potatoes, use potatoes that have been cooked and slightly dried before dicing and mixing.
If you are reheating pre-made hash, reduce the initial cooking time by 3 minutes.
If you prefer a softer texture, reduce the final cooking time by 2 minutes.
