Ingredients
Scale
1 lb large shrimp, peeled and deveined (tail on optional)
1 cup all-purpose flour
2 large eggs, beaten
1 cup sweetened shredded coconut
1/2 cup panko breadcrumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
For the Sauce:
1/2 cup sweet chili sauce (store-bought or homemade)
1 tablespoon lime juice
Instructions
Pat the shrimp completely dry using paper towels. This helps the coating stick.
Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. Combine shredded coconut, panko breadcrumbs, salt, and pepper in the third dish.
Working with one shrimp at a time, dredge it first in the flour, shaking off excess.
Dip the floured shrimp into the egg mixture, allowing excess to drip off.
Press the shrimp firmly into the coconut mixture to coat all sides evenly. Place coated shrimp on a plate.
Preheat your air fryer to 380°F (195°C) for 5 minutes.
Lightly spray the air fryer basket with cooking spray. Arrange the coated shrimp in a single layer in the basket, ensuring they do not touch. Work in batches if necessary.
Lightly spray the tops of the shrimp with cooking spray.
Air fry for 8 to 10 minutes, flipping the shrimp halfway through the cooking time, until the coating is golden brown and crispy.
While the shrimp cooks, prepare the sauce by whisking together the sweet chili sauce and lime juice in a small bowl.
Serve the hot coconut shrimp immediately with the dipping sauce.
Notes
For extra crispiness, chill the breaded shrimp on a baking sheet for 15 minutes before air frying.
If you prefer a gluten-free option, substitute the flour with rice flour and use gluten-free panko breadcrumbs.
Do not overcrowd the air fryer basket; cook in batches to achieve maximum crispness.
