Make perfectly crispy chicken wings in your air fryer using this simple method. This recipe includes instructions for a classic Buffalo sauce coating and a Garlic Parmesan dry rub.

Ingredients

Scale
  • 2 lbs chicken wings (flats and drumettes)
  • 1 teaspoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup unsalted butter, melted (for Buffalo sauce)
  • 1/2 cup Frank’s RedHot sauce (for Buffalo sauce)
  • 1/4 cup grated Parmesan cheese (for Garlic Parmesan rub)
  • 1 teaspoon dried parsley (for Garlic Parmesan rub)
  • 1 teaspoon garlic powder (for Garlic Parmesan rub)

Instructions

  1. Pat the chicken wings completely dry using paper towels. This step is key for crispiness.
  2. In a large bowl, toss the dry wings with baking powder, salt, pepper, and garlic powder until evenly coated.
  3. Preheat your air fryer to 380°F (195°C) for 5 minutes.
  4. Arrange the wings in a single layer in the air fryer basket. Do not overcrowd; work in batches if necessary.
  5. Air fry at 380°F (195°C) for 15 minutes.
  6. Flip the wings and increase the temperature to 400°F (200°C). Cook for another 5 to 10 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is very crispy.
  7. For Buffalo Wings: While wings cook, whisk together the melted butter and hot sauce in a bowl. Once cooked, toss the hot wings immediately in the sauce.
  8. For Garlic Parmesan Wings: In a small bowl, mix the Parmesan cheese, dried parsley, and garlic powder. Once wings are cooked, place them in a clean bowl and toss with the dry rub until coated.
  9. Serve immediately.

Notes

  • Baking powder helps draw moisture from the skin, creating a crispier texture without flour.
  • For extra crispiness, let the seasoned wings rest uncovered in the refrigerator for 1 hour before air frying.
  • If you are cooking frozen wings, skip the initial drying step and cook at 360°F (180°C) for 10 minutes before proceeding with the recipe steps, increasing the total cook time by about 5 minutes.
