Ingredients
Scale
1 pound boneless, skinless chicken breasts
1/2 cup buffalo sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked brown rice or cauliflower rice (for low carb)
1/2 cup chopped celery
1/2 cup chopped carrots
1/4 cup plain Greek yogurt
2 tablespoons crumbled blue cheese
1 tablespoon milk or water (to thin)
1 teaspoon white vinegar
Fresh parsley for garnish
Instructions
Season the chicken breasts with garlic powder, salt, and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes per side until cooked through (internal temperature reaches 165°F).
Remove the chicken from the skillet and shred it using two forks.
Return the shredded chicken to the skillet. Pour the buffalo sauce over the chicken and toss to coat completely. Cook for 1-2 minutes until heated through.
While the chicken finishes, prepare the blue cheese yogurt drizzle: In a small bowl, whisk together the Greek yogurt, crumbled blue cheese, milk or water, and white vinegar until smooth. Add more liquid if you prefer a thinner drizzle.
Assemble your healthy chicken bowls: Divide the cooked rice or cauliflower rice between two bowls. Top with the saucy buffalo chicken.
Arrange the chopped celery and carrots around the chicken.
Drizzle generously with the blue cheese yogurt sauce and garnish with fresh parsley.
Notes
For an easy slow cooker meals version, cook the chicken breasts in the slow cooker on low for 4 hours, shred, then mix with buffalo sauce and keep warm.
If you prefer a richer flavor, substitute sour cream for the Greek yogurt in the drizzle.
This recipe is great for meal prep chicken ideas; store components separately and assemble just before eating.
